About this dish

Kashi Chaat is the defining street food of Banaras — crispy papdi layered with boiled chickpeas, cubed boiled potatoes, cooling sweetened yoghurt, tangy tamarind chutney, spicy green chutney, and a generous shower of chaat masala and sev. Every vendor has a secret ratio.

Unlike Delhi's chaat which often leans sweet, Banaras chaat is more balanced — the tamarind is sharper, the yoghurt less sweet, and the masala more pungent. Best eaten in the morning when the papdi is freshest.

Honestly the best chaat I've had in my life. The tamarind chutney at Kashi Chaat Bhandar is unlike anything else — sharp and complex. Go early, the queue is worth it.

Tried three different vendors. Kashi Chaat Bhandar is the best but Deena's is a solid backup when the queue is too long. Skip the touristy ones near Assi Ghat.

As a South Indian, I was skeptical about chaat. This converted me. The yoghurt balance here is perfect — not too sweet, just cooling enough against the spice.
